Zucchini Fritters

Breakfast serving: With poached eggs and bacon

Lunch serving: With a large side green salad

Dinner serving: With a protein (chicken or beef), and stir fry veg


  • 1/2 cup almod flour (optional)
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • Salt and pepper
  • 1 cup grated zucchini (wrap in a dish towel and squeeze the water out)


  1. Grater the zucchini, wrap in a dish towel and squeeze out all the water (use to water your plants or in a soup)
  2. Add flour and Parmeasan cheese and eggs
  3. Salt and pepper to taste
  4. Consistency should resemble a thick batter

Cooking Variations

  1. Spoon into a muffin tray and bake at 180 c for 30 mins.
  2. Spoon mixture into frying pan with heated coconut oil, and fry on both sides until done.
  3. Line the air fryer with baking paper and spoon the mixture into portions to you size liking. Cook on 200 degrees C for 20 minutes (Keep checking them)

  • Chopped Bacon Bits (cooked prior)
  • Crumbled Feta Cheese
  • Grated Raw Broccoli
  • Cherry Tomatoes sliced
